There is a pancake that is healthier than your average pancake; ther is no refined flour in it. VERY easy to make you will wonder why you ever bought pancake mix! The cream of wheat gives it a very nice texture. This recipe would be perfect for someone on Weight Watcher's Core program. Makes 2 large pancakes.

Number of Servings: 2

Ingredients

    1/2 cup Cream of Wheat (wheatlets)
    1/4 cup Oatmeal, Quick cooking.
    1 Large egg
    1 tsp baking powder
    1/4 non-fat milk
    salt
    water
    Cinnamon (optional)
    2 tsp oil for cooking.



Directions

Mix dry ingredients and then add the egg and milk. Mix well and add a little bit of water just to make it batter consistancy. Let it sit for a minute while you heat the pan on medium-low heat. If the batter seems too thick add a bit more water. Spoon the batter into the pan and shake the pan a bit so the batter spreads out. Cook on both sides until they are browned.

    Incredible!
    Excellent texture and flavor. Used whole grain cream of wheat,150 calorie packs and it took almost 2 packs, added 1 cup water, which was good as made 2 pancakes each. Vary outcome on water added/ thicker/thinner. (I think calorie count too low on this recipe as choose cooked cream of wheat not dry) - 6/8/17

    These were very good pancakes for as healthy as they are--even my husband liked them! They made 2 per serving if you used 1/4 c. batter. They were very filling. I will definitely make these again. - 5/29/08
