Low Fat-Potato Salad Low Fat-Potato Salad
Number of Servings: 12

Ingredients

    6 Med Potatoes, Red (2 Pounds)
    1 1/4 Cups of Light Mirical Whip
    1 Tablespoon Prepard Mustard
    1/2 Tsp Salt
    1/4 Tsp Black Pepper
    1 C. thinly sliced celery
    1/3 C Chopped Onion
    1/2 C Chopped Dill Spears
    6 Hard -Cooked Eggs, Coarsely Chopped
    Lettuce Leaves (Optional)
    Paprika (Optional)


Directions

In medium saucepan place potatoes and a small amount of water to cover and, if desired, 1/4 tsp of salt. Bring to a boiling; reduce heat. Simmer, covered, for 20-25 minutes or just until tender. Drain well; cool slightly. Peel and cube the potatoes.
Meanwhile, for dressing, inlarge bowl combine the mayo, mustard, the 1/2 tsp salt and pepper.
Stir in celery, onion, and pickles. Add the potatoes and eggs. Toss lightly to coat. Cover and chill for 6-24 hrs.
To serve, if desired, line a salad bowl with the lettuce leaves. Transfer the potato salad to the bowl. If desired, sprinkle with paprika.
Serves 12 side dish servings.
