Introduction

Using "Missions Low-Carb or La Tortilla Factory" Corn or White tortillas & Carb Hood Dairy-makes it low-carb without lossing flavor. Also, freezes & re-heats well. Ingredients

    1 1/2 c. reduced-fat Mexican shredded cheese blend.
    1 c. Carb Hood Count Down 2% Beverage.
    3/4 c. fat-free egg sub. or (3) beaten eggs.
    6 Mission Low-Carb Whole Wheat, Corn or White tortillas (your choice), torn into 2 in. pieces.
    2 cans (4oz.) chopped mild green chiles or green salsa (can be substituted).
    1/2 c. mild chunky salsa or can Rotel.
    1/4 tsp. salt (omitted for low-sodium diet).
    2 tsp. chopped cilantro
    Fat -free or light Sour Cream
    1 lb. skinless cooked chicken breast or ( 2 cans white meat chicken).
    1 tsp. olive oil to grease pan & (1) large glass

Directions

Grease large glass baking dish with olive oil. Pre-heat oven to 375*. In large mixing bowl, combine 1 c. cheese, Carb Hood, eggs, tortillas (already torn) chilies, salsa , chicken & salt. Mix well & pour into pan. Bake at 375* about 30 min. till set.
Sprinkle additional 1/2 c. cheese & cilantro over top & bake another couple minutes till cheese is melted. Serve with dollup of sour cream. ( Can omitt chicken for vegetarian dish instead ). Serves 6.

    carb hood=low carb milk...I used a can of campbells condensed fiesta nacho, it added about 30 calories per serving and upped the flavor big time-awsome recipe though! - 7/9/09

    Tried this last night. My family really liked it. The hubby told me to add it to my dinner list so I know it was a hit. I couldn't find Carb Hood at my store so I used Fat Free half and half. Gotta work with what you have. It was yummy. Thanks for posting this recipe! - 2/1/11

    Made this dish for my family tonight. My husband put it in a tortilla and our 8 year old loved it. I put the chicken in a crock pot with half of a packet of taco seasoning. I didn't use salt since I don't use salt. I ate mine with sour cream and salsa. Very good! - 6/8/10
