Introduction

Whole Wheat Penne with Tomato Lentil & Arugula Whole Wheat Penne with Tomato Lentil & Arugula
Number of Servings: 4

Ingredients

    2 cups Diced Tomatoes
    1 cup Tomatoe Sauce
    small onion
    2 cloves garlic
    2 tbs olive oil
    1 cup mushrooms
    1/2 cup precooked lentils
    1 1/2 cups arugula
    8oz whole wheat penne
    parmesan to taste
    salt & pepper to taste
    red chilli optional


Directions

Heat 2 tbls olive oil in pan over med heat. Add chopped onion and crushed garlic, cook until softened. Add mushrooms and saute a few minutes. Add chopped tomatoes, tomato sauce and lentils. Stir until heated through. Add arugula and stir until wilted. Serve over cooked penne, add cheese, salt & pepper, and red chilli to taste.
Makes 4 servings
