Introduction
Love homemade pizza, but don't always have yeast on hand. This crust is easy with no yeast, and the cholesterol is a LOT lower than you'll find in a store-bought pizza! Ingredients

2.5 cup Flour - Gold medal all purpose flour
2.75 tsp Baking Powder
1 tsp Salt
1 tbsp Extra Virgin Olive Oil
.75 cup (8 fl oz) Water, tap
1.5 tbsp Extra Virgin Olive Oil
2 large whole (3" dia) Tomatoes, red, ripe, raw, year round average
2.5 cup Spinach, fresh
0.25 cup Mozzarella cheese, weis part-skim
Directions
Mix the first 5 ingredients together. You may need to add a little more water, but not much. Knead for 3-4 minutes. Bake at 400 degrees for about 5-7 minutes, remove.
Brush on 1.5 T olive oil and add any Italian seasoning you like. Slice tomatoes; if they are exceptionally seedy, remove about half of the seeds. place in thin layer on crust. Add fresh basil if you like and fresh spinach. Top with cheese. NOTE: This recipe was written for 2 cups of cheese, for MAX cheesiness so one would not feel deprived. HOWEVER . . . if you want to put less on, go for it! Sometimes too much cheese insulates the ingredients underneath so that the rest of the pizza is undercooked (yuck!). Bake for 10-20 more minutes (keep an eye on it to make sure it doesn't burn). Enjoy!
