Ingredients

6 large Eggs
1/4 cup Milk, 2%
4 tbsp Parmesan Cheese, grated
1/4 cup onion finely chopped
2 oz Canadian bacon diced
1/4 cup mushrooms finely chopped
3 tbsp Green Peppers finely chopped
1 Jalapeno Pepper finely minced (optional)
1 large or 2 small Kale leaves, ribbed and finely chopped
Non stick cooking spray
Salt and Pepper to taste
Directions
Preheat the oven for 350 F. Spray a nonstick 12-cup muffin pan with nonstick cooking spray.
In a bowl whisk 6 large eggs with milt. Add salt and pepper. Once whisked to a single consistency (1-2 minutes by hand), add in the remaining ingredients. Spoon an equal amount of egg mixture into each muffin cup.
Bake for 20-25 minutes until sides are slightly browned. Let cool in pan for 2-3 minutes and remove to finish cooling (or eat!) on a wire rack.
Serving Size: makes 12 individual cups
