Introduction

Ingredients

    1 1/2 lbs Ground beef, lean
    1/2 medium (2-1/2" dia) Onion, chopped
    1/2 Med. Green Bell Pepper, chopped
    1 tsp Salt
    1 cup Water
    1 can Diced Tomatoes
    1 tsp Chili powder
    1 8 oz. can Tomato Sauce
    1 1/2 cup (12 oz) Tillamook All Natural Sharp Cheddar, shredded
    1 cup Ronzoni SmartTaste Elbow Noodles

Tips

Mom's original recipe called for:
1 lb of ground beef
1 medium onion
1 bell pepper
1 cup macaroni
Grated cheddar cheese, to taste

I added 1) more beef and cheese, for my low carb diet, 2) less onion and bell pepper, 3) I use sharp cheddar, and 4) replaced elbow macaroni with high fiber elbow macaroni.


Directions

Brown the ground beef with the onion and bell pepper. Drain grease if needed.

Add macaroni, stir to coat pasta with the leftover oil.

Add tomato sauce, diced tomatoes, water, salt, and chili powder.

Bring to a boil then reduce heat and cover. Simmer for about 20 minutes or until the macaroni is done.

Take off the heat, stir, and then top with cheese and cover again until the cheese melts, usually about 5 minutes.

Note: Mom's recipe doesn't say how much cheese so I guessed at how much I usually put on it. You don't have to use as much cheese as I do if you don't like that much cheese. I just like all the cheesy goodness!
