1.0 cup Wheat Berries, Nature's Earthly Choice Red Winter Wheat WG 1/4 C dry
1 cup Sweet potato, cooked, baked in skin, without salt
1 serving Ocean Spray, Craisins Original Sweetened Dried Cranberries 1/4 cup
30 gram(s) Almonds Mariani Premium Sliced Almonds (1/4c)
2 tbsp Extra Virgin Olive Oil
2 clove Garlic
3.0 tbsp chopped Scallions, raw
Directions
Boil the wheat berries per package directions ~ 12 minutes and drain. Put into large serving bowl. Meanwhile, bake or microwave 1 small sweet potato, cube into 1 cup portion. Mince light green and white parts of scallions. Discard dark green stems.
Add Craisins, almond slices, 2 pressed garlic cloves, minced white and pale green scallion parts, and olive oil to the cooked wheat berries. Gently fold sweet potato into the wheat berry mixture. Salt and pepper to taste.
Serving Size: 8 - 1/2 cup servings
