Introduction

THe recipe called for red wine but I did not have, so I am using Sherry instead. Flour called for 1 tbsp but recipe maker would not let me change. I made homemade croutons with the bread in oven . Ingredients

    3 tbsp Butter, unsalted
    3 cup, chopped Onions, raw
    3 serving Vegetables: Garlic (1 glove, raw) (by KNFRAIN)
    2 tsp Thyme
    2 serving Bay Leaf - whole leaf (by BRAGA76)
    4 serving Pacific Natural Foods Beef Broth, 1 cup
    0.0625 cup Bob's Red Mill Gluten Free All Purpose Baking Flour (by DS1222)
    0.5 cup cooking sherry (by KITEFLYINGAL)
    4 serving Canyon Bakehouse Gluten Free 7-Grain Bread (by CINEMACHIC)
    salt and pepper to taste.
    sour cream or yogurt to top or cheese.

Directions

Melt butter in stock pot. Chopped the onions and garlic and all herbs. Place in pot and cook with salt and pepper until soft and caramelized . about 25 to 30 mins. While they are cooking..preheat oven 350 and cut bread into cubes.and make the croutons.This can be done in your toaster oven as well to save using your oven for one thing. Croutons are done in 10 minutes or so . Add the sherry and bring to a boil....reduce heat to a simmer until it evaporates and onions are dry.
Remove bay and fresh herb sprigs. Stir in flour into the onions than turn heat to medium for 10 mins. Add the broth and simmer another 10 min. Let cool and ladle soup and top with croutons and cheese. YOu can broil the cheese on top for 3 to 5 mins.
