Introduction

This hot water fried cornbread is similar to another listed, but doesn't use flour, only cornmeal. This hot water fried cornbread is similar to another listed, but doesn't use flour, only cornmeal.
Number of Servings: 6

Ingredients

    1 cup cornmeal
    1 tbsp salt
    1 cup hot boiling water
    canola oil for frying (recipe calculation assumes 1 tsp of oil retained in each cornbread pattie)

Directions

Pour 1 cup boiling water over cornmeal in bowl to make it swell and form into a thick porridge consistency, thick enough to form into patties between hands. Shape patties and ease into a skillet with hot canola oil. Fry and turn until patties begin to brown on both sides. Remove and let drain on paper towels. Especially good with blackeyed peas and sliced tomatoes.
Makes about 6 5-inch by 3 inch patties.

    My family and I really liked this...it is so easy to make and I have made it twice.... the second time I added about 2 tbs of onions which we felt made it even better! We will be making this more often! - 12/4/08
