    1/8 tsp. salt
1 cup finely chopped apple, your fav variety

Score cucumber and slice each into 16 slices.
Mix all other ingredients in small bowl. Cover and place in fridge until chilled, about 1 hour.

This is an excellent combination, but I made it like a regular fruit salad. I cubed the 3 cucumber, 1 apple and used cubed pineapple. I tossed all the combination together and replaced the salt with a seasoning called Spike. I upped the calories a bit because I didn't use low fat sour cream. - 9/20/08

You can still use the sour cream but use the fat free. - 7/3/08

Try it with Plain low fat yogurt instead of sour cream.
half the cals, no saturated fats and sticks better.

    Incredible!
Sounds great! I have added it to our meal plan for next week. Along with some whole grain bread, this will make an excellent meal. - 6/13/08
