Pomegranate Cranberry Quinoa

2 cup Water
1/2 cup Ocean Spray Pomegranate Craisins
1/2 tsp Salt (optional)
1 cup Quinoa
3 tbsp chopped Scallions
1 tbsp Olive Oil
1 tbsp Lemon juice
I like to cook my quinoa with stock, omitting the salt. Pine nuts, pecans, and almonds are all great additions for a bit more texture and flavor profile.
For gluten free cooking, make sure your ingredients are sourced from a certified gluten free factory/company.
2. Add water, craisins, and salt. Bring to a boil.
3. Reduce heat to simmer. Cover and cook 15-20 minutes. Remove from heat and let rest 5 minutes.
4. Stir in scallions, olive oil, and lemon juice.
