Introduction

Easy breakfast egg muffin. I didn't have any bacon and being a southern girl I always have country ham for seasoning. Ingredients

    3.0 oz Meat, Ham Harper's Country Cured Ham Pieces
    3.0 serving Swaggerty's Mild Country Sausage Patties
    9.0 serving Egg, Kroger Large Grade A
    1.0 cup Cheese: Mexican Style Blend/4 Cheeses (Kroger)
    4.0 oz Kroger whole milk vitamin D
    2.0 cup Spinach, fresh

Directions

Cook your ham and your sausage separately and place on paper towels to drain and cool. In a large bowl mixed together your eggs, milk, and cheese. Salt and pepper to taste. When meat mixture is cooled add it to your egg mixture and stir. I chopped the spinach and add it to the mixture last. Pour into large muffin tins. Bake on 350 for 15 to 20 minutes, depending on how you like your eggs sit. I like mine firm. Please feel free to substitute bacon or any other meat for the ham. It was what I had in the refrigerator at the time.
