Introduction
A little unorthodox to some, but I love this spicy combination of peppers, herbs, and vegetable juice with the creamy red lentils. A great source of veggie protein and fiber! Ingredients

3/4 cup water
1/2 cup red lentils
1/2 tsp mustard seed
1 large white onion, chopped
1 tbsp minced ginger
1 jalapeno pepper, seeds IN, minced
3 cloves garlic, minced
1/2 tbsp coriander
2 tsp cumin
1 plum tomato, chopped
1/2 cup V8 or tomato juice
salt to taste
1/2 tbsp cilantro
Directions
Bring water to a boil in a small saucepan.
Add lentils, stirring, then reduce heat.
Cover and simmer 15 minutes.
Meanwhile, heat a large, non-stick skillet and add mustard seeds.
When they begin to pop, add onion, ginger, jalapeno and garlic.
Add a splash of water and cook until the onions and garlic are golden.
Add coriander and cumin, cook 1 minute.
Add tomatoes and cook, stirring, until tomato is saucy.
Add V8 and bring to a boil.
Reduce heat and cook 6 minutes.
Stir in cooked lentils and remove from heat.
Add salt and cilantro, stirring well.
Serve.
