Introduction

These are nice and healthy muffins with just the right amount of sweetness and oil to make them taste both healthy and delicious. These are nice and healthy muffins with just the right amount of sweetness and oil to make them taste both healthy and delicious.

Ingredients

    1/2c All Bran Cereal
    2/3c Boilin Water
    1/2c Veg Oil
    1/4c Honey
    1 whole egg, slightly beaten
    4 egg whites, slightly beaten
    2c grated carrots
    1 med Green apple, grated w/ peel on
    1c buttermilk, lowfat
    1/2c soy milk or milk
    1 tsp vanilla extract

    1c unbleached flour or white flour
    1c whole wheat flour
    1c muesli cereal or old fashioned oats
    1 tsp ground cinnamon
    2 tsp baking soda
    1 tsp baking powder
    1/2c raw or toasted almond slivers or chopped

Directions

Makes 24 servings, muffin per serving
Preheat Oven 375'F / 180'C & spray muffin tin
Bake about 20 min.s

Step 1:
Pour boiling water over all bran cereal, cover & stand for 5 min. In the meantime, finely grate carrots and apple.
Step 2:
Once the all bran cereal (or any bran cereal) is soften MIX together all the first 11 items. Stir until moistened and set aside.
Step 3
In another bowl combine the dry ingredients & almonds, stir well.
Step 4
Combine the wet bran mix with the dry flour mixture and gently mix together. DO NOT OVER MIX, a little dry flour is fine. Otherwise your muffins wont have that lumpy mountainy look.
Step 5
Spoon equally into all 24 greased muffin cups.
Bake for 20 mins. Cool and Keep in Fridge
