Ingredients

    Souvlaki:
1 package boneless skinless chicken thighs, cut into 1 inch chunks
    2 tbsp olive oil
    Greek Seasoning
    1 tsp Oregano
    4 cloves garlic
    ½ tsp black pepper
    Juice of one lemon
Zest from one lemon*this is not in the list as I couldn't find nutritional info on lemon zest.*

Directions

Souvlaki:
In a large bowl, coat the chicken with the Greek seasoning, rubbing it into the pieces very well. Then add the rest of the ingredients, toss to coat well. Cover and set in fridge to marinate at least 1 hour, but longer is better.
Place on skewers and grill over low heat until the juices run clear.

You can serve the souvlaki with pita, red onion slices, lettuce, tomatoes and tzatziki sauce if you like.

Note: Prep time includes the marinating time of one hour for the chicken.

Greek Seasoning is a store bought blend that combines common spices used in Greek cooking. Look for it where spices are sold.

This was something I would make once a week. It was very good. I let it marinate all day and then threw it in the oven before I left for my workout and it was ready when I got home. - 7/24/08

    Very Good
Yummy. I grilled vegetables to go with this and skipped rice since it was served with pita. Make some extra marinade to brush over veges or if in a time crunch, use Greek salad dressing. - 9/6/10
