Introduction

I really love garlic and after spending 3 years in Spain both garlic and olive oil became a natural part of my pantry. it was no surprise that the first time I came upon a cascading pile of beatiful green, exotic curling garlic scapes (green garlic) at the farmers’ market, I couldn't resist. Even though I really didn't have any idea what do with them. Actually they are great anywhere you would use garlic or green garlic. This is fab use for them while the markets are full of many hued, nutrient filled spring potatoes.

Number of Servings: 4

Ingredients

    8-10 ( approximately) New potatoes... Red, Blue, Yukon, Fingerling whatever is available from your green grocer or Farmers Market
    Be Creative - roughly a Quart basket from the farmers market.
    3 tsps Olive oil
    water to cover
    1/2 tsp Sea Salt or Kosher salt
    Black cracked pepper
    2 garlic scapes finely chopped


Directions

Clean and place potatoes, water and salt in 2 quart saucepan. Drizzle olive oil over potatoes.

I like to add olive oil to my boiled potatoes anyway it keeps them from boiling over.

Bring to a boil then lower to simmer till almost tender, 15 to 20 minutes (this is dependant on the type size of potato) add garlic scapes and simmer anothe 4-5 minutes. Add black cracked pepper and serve.

You can add low or non fat sour cream, or light ranch if desired.

    Just tried garlic scapes for the 1st time. I haven't tried this recipe but it looks good. I was assuming that you would drain the potatoes and scapes after they have simmered. Thanks for the recipe! - 6/12/13

    I am glad to find your recipe. We are buying a share at a CSA. Scapes and potatoes are both on the list of what should be available. I had not heard of scapes before. I know we will love this recipe, so I am rating it. We have bought different kinds of potatoes from the Amish in the past. - 1/31/11
