Introduction

This is quick and tasty. It has enough protein for a veggie main dish but also makes a great side. This is quick and tasty. It has enough protein for a veggie main dish but also makes a great side.
Number of Servings: 6

Ingredients

    * Onions, raw, 1 medium (2-1/2" dia) chopped
    Garlic, 2 cloves
    Quinoa, 0.75 cup
    1.5 cups water (or broth)
    * Olive Oil, 2 tbsp
    * Sweet Corn, Fresh, 1.5 cup
    * Beans, black, one can
    * Cilantro, raw, 1/2 cup
    * *Cumin 3 tbsp
    * Pepper, red or cayenne, .25 tsp

Directions

1.Saute chopped onion and garlic in oil until soft
2. Add quinoa and water as well as seasoning, simmer for about 20 minutes until most liquid is gone
3. Add in corn, cook for 3 more minutes until done
4. Stir in black beans and cilantro
