Ingredients

    1/2 cup Masa Harina
    2 large eggs
    1/2 cup Water
    1 tsp Granulated Sugar
    1 1/2 tsp Baking Powder
    1 tbsp Corn Oil

Tips

This recipe is gluten free and lactose free. If you want to add nutrition, you can make it with milk instead of water, but the pancakes will be more dense. Instead of using fresh milk, mixing 2 tablespoons of instant nonfat dry milk with the masa harina will add milk nutrition without significant lactose, since powdered milk is made by a freeze-drying process that removes almost all of the lactose. Directions

Beat eggs in pitcher. Add water, oil, sugar and baking powder, mix well. Add masa harina, beat until smooth (there is no gluten, so the batter will not get tough). Fry batter on greased skillet (cast iron works best). Serve with desired topping.

Serving Size: Makes 4-6 small pancakes (3-4 inches diameter)
