Ingredients

0.3 cup King Arthur Flour Gluten Free Pancake Mix (1/3 cup = 1 serving dry)
0.3 tsp Salt
0.3 cup Milk, nonfat (skim milk)
0.3 tbsp Butter, unsalted
1 tsp Active Dry Yeast (by GRTMOMX3)
0.3 tsp Granulated Sugar
0.25 cup (8 fl oz) Water, tap
1 serving Egg white, large
Directions
1. Preheat oven to 375
2. Grease 3 english muffin rings with butter. if you do not have english muffin rings, you can take a 6 inch long sheet of tin foil, roll it into a 1 inch strip and shape that into a ring. Make sure the ring is sealed tightly. Just like a regular ring, make sure this is greased with butter.
3. In a large bowl mix 1 tsp of sugar with warm water and yeast. Cover this with a towel and set aside for 10 minutes to let it rise.
4. After the yeast mix has risen, add in the flour, egg and butter. Mix until smooth.
5. Grease a large frying pan with butter and set over medium heat. Then place the greased muffin rings on top of the pan.
6. Use a spoon to fill each muffin rings with batter. Allow the muffins to cook for 5 minutes. Use a spatula to flip the entire muffin, including the ring and let them cook for another 5 minutes.
7. Once both sides have a light golden color, place them on a greased baking sheet and into the oven for 15-20 minutes.
8. Remove from oven and allow to cool.
