Introduction

A nice, quick salad to throw together when avocados are in season! A nice, quick salad to throw together when avocados are in season!
Number of Servings: 8

Ingredients

    1 avocado, peeled, seed removed, and diced
    1 can yellow corn, drained
    1/2 c scallions, thinly sliced
    1 c halved cherry tomatoes (optional)
    1 can black beans, drained and rinsed
    juice of 1 lemon
    1 T lemon pepper seasoning (or to taste)

Directions

Prepare ingredients as listed above.
Mix in large bowl and chill for at least 1 hour.
Serve as a side dish, on a salad, as a dip with chips...it's up to you!
This recipe is easily doubled.
