Ingredients

    1 cup (1" pieces) Cauliflower, cooked
    .05 cup Cooked Onion
    .2 tbsp Earth Balance Natural Buttery Spread

Directions

cook cauliflower in water on stove until tender,
lightly saute small onion with 1/3 cup cauliflower bits in pan with butter and small onion chopped.
Drain cauliflower (save water in bowl) but leave apx. 2/3 cup water in with cauliflower.
Blend with blender or hand blender, add more retained water if necessary to get right consistency.
I like mine like smooth mashed potatoes.
Anyway, add the cauliflower bits and onion to the soup. Stir together then enjoy.
