Ingredients

2 Skinless de-boned cooked chicken breast (cut up)
3 tbs no fat cottage cheese
2 tbs low fat hard white cheese
1 tsp mustard
1/2 tsp minced garlic
dash black pepper
4 slices whole grain bread
2 lettuce leaves
8 thin tomato slices
1 tsp lemon juice
Directions
Combine chicken, lemon juice, cottage cheese, mustard, garlic, pepper. Spread 1 cup chicken mixture over each of 2 bread slices. top each with 1 lettuce leaf and 4 tomato slices and 1 bread slice. Serve!
