Ingredients

    Cauliflower “Dough”

    1/2 head, medium Cauliflower
    1 Egg
    1 clove Garlic
    1/4 cup Parsley
    1/2 cup shredded Italian 4 or 5 cheese blend
    Pinch salt and pepper

    Toppings:

    Any combination of vegetables that total about 1 cup when cut up (onions, spinach, bell pepper, broccoli, garlic, etc.)
    1/3 cup Italian sauce
    6 oz Mozzarella Cheese, whole milk

Directions

To Make Dough
1. Shred cauliflower in food processor
2. Steam cauliflower about 15 mins til tender
3. Refrigerate cauliflower till cool, about 15 mins
4. Turn out cauliflower into clean cloth and squeeze out excess water
5. Preheat onion to 450 degrees F. Line a baking sheet with parchment paper or silicon mat
6. Stir Italian cheese blend, parsley, garlic, salt & pepper into cauliflower until full mixed. Pour mixture onto baking sheet; press and shape into pizza crust, about 1/4 inch thick
7. Bake in oven until lightly browned about 15 mins.

Toppings
1. Meanwhile, cut up your veggies. Fry them in a nonstick pan until soft. (This lets the water leach out of them before baking)
2. Once the cauliflower crust has been removed from the oven, add toppings and bake 15 mins more (first sauce, then most of the mozz, then veg, then rest of mozz)

Serving Size: Makes 1 pizza to be shared by 2 people (2 serv)
