Tips

I usually add blueberries and or nuts to my pancakes. Walnuts are great with this recipe.

Directions

Mix or blend first: banana, 1/2 cup of oat milk, vanilla extract, 2 eggs, yogurt, and protein powder. Ground the cup of oats in a coffee grinder or blender until it becomes a coarse flour texture. Then, on a separate bowl, mix the dry ingredients: home grinned oat flour, baking powder, salt, cinnamon, and flax seed meal; mix well, and blend into the wet ingredients by hand, a couple of spoonfuls at a time. Do not over mix. It can store in the fridge for about 2-3 days.

Serving Size: makes 12 small to medium size pancakes; approximately, 1/4 cup batter per serving
