Introduction

Ingredients

    12 vanilla wafers
    8 oz. cream cheese
    1/2 c. sugar
    1 tsp. vanilla
    2 eggs

Directions

Line muffin time with foil liners. Place one wafer in each liner. Mix cream cheese, vanilla, and sugar on medium speed until well blended; add eggs. Mix well. Pour over wafers, filling 3/4 full. Bake for 25 minutes at 325 degrees. Remove from pan when cool. Chill. Top with desired fruit topping and enjoy.

    If you exchange the sugar for splenda, the cream cheese for tofu and the vanilla wafers for 18 graham crackers you end up with an Under 100 Calorie Cheese cake.....Add a couple tablespoons of coco powder and you get a chocolate cheesecake. - 1/26/10

    This is great! I LOVE cheesecake, and this way it is portion controlled and I don't cheat while slicing! I add lots of sliced strawberries on top to get that fruit in. - 8/7/08

    By using a package of neufachetal cheese, you will save 19 calories and 2.5 g fat per serving while adding more protein and carbs!! - 8/21/08

  • I used splenda as well, added lemon juice to half and chocolate power to the other half. Both were outstandingThis is a great recipe and the cupcake satifies my taste buds for a sweet treat. Thanks for sharing. - 6/21/13
