Ingredients

    1 can Chick peas
    1 medium red pepper
2 Tblsp Tahini (found in the Ethnic food Isle)
3 cloves Garlic (more or less for taste)
    1 tsp cummin
    Fresh Parsley
    Juice of 1 small-medium Lemon
    1 tsp zest of Lemon
Dash of Onion Salt and Pepper (to taste)

Directions

Roast red pepper and garlic. Peel away blackened skin of red pepper. Chop and combine in food prossesor. Add all remaining other ingredients to food processor and blend until nice and smooth! Serve with veggies or pita chips!

This always tastes better after a rest in the fridge- just remember to bring it back to room temp. before serving.

(I reserved the juice from my can of beans to thin out my hummus as needed)

I labled this under lunch but really this is a great appetizer, snack, dinner, etc. etc. The possiblities are endless!!!

    Incredible!
I used Northern Beans (no chick peas in the pantry :) and red peppers from a jar. It is YUMMY even with the substitutions. Will follow the exact recipe next time & there will be a next time! - 10/4/11
