Introduction

This is so good! I love to make it a day ahead so that all the flavors blend together. I make bruschetta to go with it and everyone always comes back for more. This is so good! Ingredients

    GV Garden Rotini - 075 cup dry, 6 cup (this is a 16 oz box)
    Red Ripe Tomatoes, 1 large whole (3" dia)
    Cucumber (peeled), 1 medium
    Broccoli, fresh, 1 cup, chopped
    Cauliflower, raw, .75 cup
    Shallots, 3 tbsp chopped
    Chicken Breast, no skin, 2 breast, bone and skin removed
    Olive Oil, .25 cup

Directions

Boil pasta as directed on package. While the pasta is cooking, sprinkle chicken breasts with basil and garlic powder. Saute in olive oil until done and cut into small cubes or slices. Cut up vegetables as you prefer. Mix all ingredients together and cover and chill for at least overnight. If you don't want to let it sit this long, refrigerate until it is cold. I usually pour about a half a bottle of Italian dressing on this before refrigerating it. If you don't like Italian, then use your choice. But, you can just chill it overnight and let your guests add their choice of dressing. This will serve about 12 to 16 one cup portions.
