Introduction

Ingredients

    4 large eggs
    1/4 - 1/2 cup milk (depending pan size)
    3 cups of fresh spinach
    1/2 cup pimentos (store bough glass jar in canned veggie section)
    1/2 cup peices of Canadian bacon (I used pizza slice sizes and cut in 3rds) can add more if desired
    1 medium onion chopped finely
    1 tbs light butter
    4 tbs grated Parmesan cheese for sprinkling (optional)
    1 6oz package of fat free feta cheese

Directions

Heat a medium sautee pan over med high heat. Add butter and onions and sautee. (About 3 min) Add in Spinach and Pimentos spice to taste (with salt and pepper) cook until spinach has reduced in size.

set aside.

in a bowl whisk eggs and milk (can add a few shakes of hot sauce)

in a glass pie pan add the spinach mixture.

add feta and chopped Canadian bacon - mix gently with hands.

Pour the egg mixture over the ingredents in the glass pan.

Preheat oven to 350. Cook for about 30 min.

Then take out from oven, and sprinkle Parmesan cheese, turn up oven to 400 and cook for 5-10 min, until top is golden brown.

    I loved this recipe. I wasn't sure if my kids would but they liked it too. The next time I might use less feta because I paid a lot for it because I doubled the recipe because there are 5 of us eating and I like having leftovers for my husband's lunch. I am definitely going to make this again - 7/29/09
