A great substitution for mashed potatoes. A great substitution for mashed potatoes.
Number of Servings: 4


    Cauliflower, raw, 1 head, large (6-7" dia)
    Turnips, 4 large
    I Can't Believe It's Not Butter, Fat Free Spread, 1 Tbsp, 4 serving
    Chicken Broth, 8 cup (8 fl oz)
    Breakstone Fat Free Sour Cream, 4 tbsp
    Flour, whole grain, 1/8 C


1. Leave cauliflower intact, peel and cube turnips.
2. Boil in chicken broth until very soft, appx. 30 minutes.
3. Remove cauliflower and turnips, place in mixing bowl with whisk attachment.
4. Salt and pepper to taste, add to vegetables, add in sour cream and fat-free margarine.
5. Using broth/boiling liquid, make a slurry with flour (enough liquid to cover and thicken, appx 1/2 C)
6. Whip cauliflower and turnips.
7. Heat slurry slowly over a low heat until thickened, quickly whip into mashed cauliflower & turnips.
8. Serve immediately or set aside to cool and serve at a later time.
9. Save reserve broth for soup at a later time.
