    Chicken Broth, 1 1/2 cups
    Canola Oil, 2 tbsp
    Onions, raw, .25 cup, chopped
    Garlic, 1 clove minced
    Beans, black, 1.75 cup
    Peppers, sweet, red, raw, sliced, .5 cup
    Carrots, raw, .5 medium chopped
    Cilantro, dried, 1 tbsp
    White Rice, long grain, 1 cup


Add oil to a large pan and saute the rice for 2 minutes over medium heat. Add minced onion, red pepper, garlic, cilantro, and carrots and saute for another 2 minutes. Add chicken broth. Bring to boil, cover and reduce heat to simmer until rice is tender (about 15 minutes). Add beans then stir to mix. Replace cover and let simmer for another 3 minutes.

Press mixture into custard cups then invert onto a small plate or bowl. Top with grated cheddar cheese and serve. Makes 4-6 servings. Calories calculated at 6-1/2 cup servings.

    The addition of cheese (in the directions) is also surprising, and doesn't appear in the ingredients...or the calorie count? - 4/11/10
