Introduction

I found this at my local Fry's Marketplace. The Mediterranean Seafood Grinder and Chipoltle seasonings were both from there. We've also substituted Fry's steakhouse seasoning grinder for the Mediterranean Seafood Grinder and it tasted great. I've also substituted an olive oil cooking spray for the olive oil and simply sprayed the skillet lightly. I found this at my local Fry's Marketplace. Ingredients

    2 three ounce Salmon fillets, rinsed and patted dry
    1/2 Tbsp Olive Oil
    1 tsp Mediterranean Seafood Grinder
    1 clove garlic, finely minced
    1/4 cup raspberry preserves
    1/4 Tbsp Kroger Zesty Blends SW chipotle seasonings
    2 Tbsp Balsamic vinegar

Directions

1. Heat a non-stick skillet over medium heat for one minute. In the mean time, season the salmon fillets to taste with the seafood grinder. Add the olive oil to the hot skillet and swirl the pan to coat. Add the salmon fillets to the hot skillet and bronze for 2 minuted per side. Lower the heat to medium and continue to cook until the fillets begin to flake (about 3-5 minutes). Remove the salmon fillets to serving plates.

2. Add the garlic to the pan and quickly sauté for about 1 min to allow garlic to become fragrant. Be careful not to burn the garlic.

3. Combine the raspberry preserves, chipotle seasonings, the balsamic vinegar and add to the pan. Stir to combine. Pour sauce over resting salmon fillets and enjoy!

    Incredible!
    We liked this a lot. It is a nice quick way to make a raspberry chipotle sauce, and still very good. We used no sugar added jam, and substituted chili con limon for the Mediterranean Seafood Grinder. Mmm!! - 8/31/11
