Ingredients

    12 oz peeled, deveined, cooked shrimp
    1 tsp finely shredded lime peel
    1/3 cup lime juice
    1/4 cup olive oil
    2 tbsp fresh cilantro
    1 clove garlic, minced

Directions

Thaw shrimp, if frozen. Rinse shrimp and pat dry. In a medium bowl combine lime peel, lime juice, olive oil, cilantro and garlic. Add shrimp and toss to coat. Cover and marinate in the fridge for 2 to 3 hours, stirring.

    Very Good
    I made this salad using less oil and enjoyed it over a bed of romaine lettuce with some sliced red & yellow bell peppers, marinated artichoke hearts & sliced avocado. I would have added some sliced purple onion, but forgot. - 8/27/09

    Missing some major information--how do you cook this? I hope we're not supposed to eat this raw!

    We took a wild guess and fried the shrimp. Definitely flavorful--I would prob use less oil in the future.
