Introduction
We went to a Greek Festival this weekend and I sampled this delicious dip. I came home and found a few recipes online, but this is the only one that looked like it might give the orange color we saw. The recipe we ate actually tasted like feta, hot sauce and maybe either green onions or jalepenos. It was served with fried pita chips, but of course I would use baked or veggies. It was awesome! Ingredients
-
-1 roasted red pepper, rinsed drained and chopped
-2 pepperoncinis, seeded and chopped
-2 small dried red chile peppers, seeded and chopped (I would wear gloves just in case)
-1/2 lb feta cheese
-juice from 1/2 -1 lemon
-2 t dried oregano
-ground black pepper to taste
Directions
Possibly using glove deseed your pepperoncini and dried red chile peppers and chop them. Put them in a food processor with the rinsed, drained and chopped roasted red pepper. Pulse on and off until well blended.
Scoop into a bowl and add the olive oil and feta and mash with a fork untl blended. Seasoning with your lemon juice, pepper and oregano.
Chill in a covered dish and serve with baked pita chips or veggies (not calculated in the nutritional values). Makes about 1 cup........8, 1/8cup servings
