Number of Servings: 6

Ingredients

    Makes 6 servings

    1 medium onion chopped
    1 cup carrots shredded
    1 cup celery sliced
    2 cups chicken stock
    2 tbsp wondra flour
    1 lb. Turkey breast grounded
    1 cup frozen peas
    2 sweet potato
    1/2 cup non fat yogurt

Directions

saute onion, celery and carrots together. Add Turkey till cooked. sprinkle flour and stir. Add Stock and peas and let simmer until thickened.

Meanwhile microwave both sweet potatoes. scoop out the insides and mash with yogurt.

Scoop into indivual bowls and top with mashed sweet potato mixture.

    Incredible!
    So awesome!! I didn't have the wondra flour so I used corn startch instead -- it thickened up perfectly! I also used left over red potatos to whip up a quick batch of mashed potatoes using skim milk. It was delicious!! - 12/3/08
