Introduction

Ingredients

    About 12 c. chicken broth, Low fat
    1 c. sliced carrots
    1 c. chopped onions
    1 c. chopped celery, including tops
    1 package Good Season's Italian Dressing Mix
    1 roasted chicken, skin removed.

Directions

If using pan drippings from roasted chicken, place in refrigerator until fat solidifies. Then remove fat.

This soup is nourishing, low calorie and low fat. The high sodium content can be nearly cut in half by using low sodium broth.

Makes about seven 2.25-cup servings.

Add rice or noodles.
