Ingredients

4 Filets Salmon, fresh or frozen
    1 Cup Light whipping Cream
1 Boullion cube (fish or vegetable)
    1/2 Cup Frozen Peas
    1/2 Cup Snap Beans
    2 Carrots, chopped
    1 ounce of White Wine

Directions

Makes 8 servings (also depending on size of filet).

Preheat the oven to 375. Place the salmon (already at room temperature) in a pan and surround it with the different vegetables. In a separate bowl, make a mixture of the cream, mashed boullion cube, and white wine. Mix until well blended, add salt and pepper to taste. Pour over salmon and vegetables so that bottom of pan is lined with sauce. Cover with aluminum foil and put in center rack in the oven for 30 minutes or until cooked through the center.

Garnish with fresh dill. Delicious served over warm rice.
