Ingredients

    9 links sweet italian sausage - cooked
    4 links hot italian sausage - cooked
    1 zucchini
    1 onion
    .25 cup red pepper
    .25 cup green pepper
    1 large can diced tomatoes
    1 can Rotel
    7 cups cooked brown rice
    4 clove garlic

Directions

-Prepare vegetables as desired (slice, chop, etc)
-Slice cooked sausage
-Saute vegetables and sausage with garlic in fry pan sprayed with Pam, until tender and sausage is hot
-add diced tomatoes and Rotel, heat until boiling, simmer 5 minutes
-mix with cooked brown rice

Makes 14 (1 1/2 cup each) servings.

    I would like to try this next time my family is coming for dinner. It's too many servings for just DH and myself but it really looks good to me. - 1/14/20
