Introduction

Kohrabi is a German type of turnip that is great during the cold weather months. It is very versatile, but I like it best in this soup. Creme fraiche is similar to sour cream, but a little thicker. Ingredients

    3-4 good sized kohlrabi
    2 tablespoons light creme fraiche (or light sour cream)
    4 cups vegetable broth
    salt and pepper and nutmeg to taste
    butter-flavored cooking spray can be used as a substitute

Directions

Peel and chop kohlrabi into bit-size pieces. Spray pot with cooking spray and fry kohlrabi until it is slightly browned. Make sure to stir often! Add vegetable broth and bring to a boil. Add creme fraiche, salt pepper and nutmeg. Cook until the kohlrabi is soft but not mushy. Taste and adjust seasoning accordingly. Enjoy!
