Introduction

Low in fat but not flavour! Low in fat but not flavour!
Number of Servings: 6

Ingredients

    1 tsp Olive Oil
    1 medium Onion, chopped
    2 cloves Garlic, minced
    1/4 tsp Pepper
    3 cups Water
    3 cups Campbell's low sodium chicken broth
    2 tsp fresh Thyme leaves
    4 cups cubed Sweet potato
    1 cup sliced Leeks, white part only
    8 Brussels sprouts, cut in half


Directions

On medium heat in a large non-stick pot, saute onions, thyme and garlic in olive oil until translucent.

Add water and broth to onions and bring to a boil. Add sweet potatoes, reduce heat and simmer 15 min.

Once potatoes are tender, partially mash, and stir in leeks and brussel sprout halves. Simmer another 10 minutes.

Makes 6 - 1 cup servings

    The whole house enjoyed it! It wasn't as hearty or flavorful as some soups, but is a great healthy comfort food for sick roommates! The flavor combo was great, but if I made it again I would add more garlic. - 2/4/09
