Ingredients

    Carrots, raw, 150 grams
    Onions, raw, 1 medium (2-1/2" dia)
    Garlic, 2 tsp
    Dried black beans, 1 cup
    2 ounces diced jalapeno peppers
    diced tomatoes low sodium, 2 cup
    low sodium tomato paste organic, 6 oz
    Chili powder, 1 tbsp.
    Splenda (optional)

Directions

"Quick soak" beans in three quart pot. Drain beans and cover with water, bring to a boil and then simmer. Cut carrots into small pieces. Dice onion. Add carrots, onions and garlic. Simmer two to three hours until beans are tender. Then add 2 ounces of diced jalapenos, 2 cups of diced low sodium tomatoes, one 6 ounce can of low sodium tomato paste and a tablespoon of chili powder. Cook on medium until hot. Sweeten to taste with Splenda if desired.
