Introduction

A delicious flavor filled rice dish that is perfect for any occasion. I make this for a perfect meatless meal. Serve with a salad and dinner is beautiful. Ingredients

    2 cups cooked brown rice
    1 cup frozen green peas
    2 cups fresh spinach
    2 ounces pumpkin seeds
    3 to 4 cloves chopped garlic
    1/4 cup chopped red onion
    2 tblsp extra virgin olive oil
    2 tblsp lite soy sauce
    Dash ofblack pepper
    Your favorite hot sauce (optional)

Directions

To a large sauce pan, add olive oil, chopped garlic, red oinion and pmpkin seeds. Toss lightly til tender. Add cooked rice and peas stirring continually. Add remaining ingredients. Turn off stove to prevent spinach from over cooking. Continue stirring until all ingredients are well blended.Serve with a nice salad and fruit plate on your best china.
