Introduction

Ingredients

1 head iceberg lettuce [washed and quartered]
1 medium onion [chopped]
1/2 cup nuts [any nuts are fine but i prefer almonds or walnuts, chopped]
1/2 cup dried cranberries [chopped]
1/2 cup no fat plain yogurt
1/2 cup no fat sour cream
1/4 cup rice wine or rice vinegar
1/4 cup paste of chipotle peppers in adobo sauce
Directions
1. chop onions, nuts, and cranberries and combine in a bowl to use as topping.
2. blend chipotle pepper paste with yogurt and sour cream and mix in wine/vinegar and let stand in the refrigerator for 15 minutes.
3. place wedges in a salad bowl and mound the topping on top of the wedges.
4. lastly spoon dressing over the topping and enjoy :]
*there will be plenty of extra dressing and topping for more than 4 salads!
