Introduction

Ingredients

    11/3 cup chicken or beef broth
    2/3 cup quick cooking Barley
    2 Cup Mushrooms, sliced
    1 Tbsp low sodium soy sauce.

Directions

Makes 4 3/4 cup servings
Bring the broth to a boil in a sauce pan; add the Barley. Simmer, covered, 12 mins.. Spray a skillet with non stick cooking spray and set over medium -high heat. Add the mushrooms and cook until tender. Add the Barley and low-sodium soy sauce. Cook stirring constinally until well heated and all liquid is gone.
