Introduction

My version of spincah & basil pesto, thrown together from what was on hand, and trying to stay as low fat as possible. I use this as a topping for ricotta and spinach tortelloni. Number of Servings: 4

Ingredients

    2 cups fresh spinach
    2 cups fresh basil leaves
    1/2 cup lemon juice or to taste
    2 tbsp olive oil
    1 tsp minced garlic, or to taste
    1/2 cup finely shredded fresh parmesan cheese
    salt and pepper to taste

Directions

Combine all ingredients in food processor until desired consistency. For me, this came out to 4 servings about 1/4 cup each.
