Introduction
This recipe has been in my family for years--My Great, Great Uncle Bill Hughes was a radio officer on merchant vessels and brought the recipe home. The candied ginger gives the cookies a sweet, unusual taste that is a perfect for the holidays. Ingredients

1 cup flour
1 cup sugar
1 tsp baking soda
1/2 tsp. salt
1 tsp. ground ginger
1 tsp. cinnamon
1 egg
1/4 cup molasses
3/4 cup shortening (soft)
3 slices minced candied ginger (approximate)
1 1/2 cups quick oats
1/2 cup raisins, chopped if wanted
1/2 cup powdered sugar
Directions
1) Mix all ingredients together in a large bowl
2) Drop spoonfulls of cookie dough onto cookie sheet--flatten with finger tips dipped in powdered sugar
3) Bake at 350 degrees for 12-15 minutes, they will be soft, do not overbake
4) Let cool and then lift to cooling racks
5) Sprinkle cooling cookies with powdered sugar
This makes several dozen cookies. They freeze well and make great holiday gifts.
