Introduction
Original recipe had 2x the milk but I found too runny. I also reduced the low fat cream cheese to no fat.I have them heating in crockpot for T-day dinner and will add more milk if needed at serving time.

Ingredients

3 pounds Yukon gold potatoes, quartered
1/3 cup fat-free milk
1 teaspoon salt
2/3 cup no fat cream cheese
1 T dried chives
1/2 tsp. onion powder
Directions
Place potatoes in a Dutch oven, and cover with water; bring to a boil. Reduce heat, and simmer for 10 minutes or until tender. Drain. Return potatoes to pan and rice.
Add the milk , chives, onion powder and salt. Combine todesired consistency. Add the cheese, and stir just until blended
Serves 10 2/3 cup portions
