Introduction

A fast and easy Vegan and Gluten Free meal for those of us only cooking for ourself! A fast and easy Vegan and Gluten Free meal for those of us only cooking for ourself!
Number of Servings: 1

Ingredients

    Notta Pasta Gluten Free Rice Linguine, 2 oz
    Broccoli, frozen, 2 cups
    Tomato, 1/2 small
    Water, 4 tbsp
    Natural Peanut Butter, 1 tbsp
    Rice Vinegar, a few splashes
    Bragg's Liquid Aminos, 0.5 tsp
    Lemon juice, 0.5 tsp
    Crushed Red Pepper to taste

Directions

1. Boil water for noodles, boil noodles (should take 6 minutes)
2. Cook broccoli (I use the microwave)
3. Drain noodles, spray pot with cooking spray.
4. Add peanut butter, water, Bragg's, lemon juice, rice vinegar to pot. Warm through, add noodles and broccoli, stir to coat.
5. Sprinkle with crushed red pepper and top with sliced tomato.
