Number of Servings: 4

Ingredients

    20 spears asparagus
    1/2 c. milk (whole used in calculations)
    4 large eggs
    3 egg whites
    salt & pepper to taste
    1 c. swiss cheese, shredded

Directions

Preheat oven to 350 degrees.

Cut asparagus into 1" pieces and cook until just tender (suggested cooking methods: steaming, boiling, or sauting).

Beat eggs, egg whites, and milk together thoroughly. Add salt & pepper to taste. Stir in cookied asparagus. Greased 8" or 9" pie pan. Pour egg mixture into prepared pan and top with cheese. Bake 20-30 minutes or until egg is set in the center of the pan--a knife will come out clean.

Makes 4 large portions.

    Easy peasy. Didn't have swiss, so used goat cheese. I also added a handful of fresh chopped herbs; thyme, lemon balm, & dill. As my 2yr old says "It's deleesious, mama!" - 5/27/09
