Ingredients

    1 16 oz. Package Extra Firm Tofu, drained and cubed
    2 Tbsp. Sesame Seeds
    3 Tbsp. Sesame Oil, divided
    1/4 Cup chopped peanuts
    1/2 head cabbage, shredded
    3 medium carrots, peeled and shredded
    2 cups snow peas, julienned
    1/2 cup green onions
    1 tblsp. dijon or spicy mustard
    1 tbsp. rice Wine Vinegar
    1 tbsp. Mirin

Directions

Preheat oven to 350 degrees. Mix drained tofu with sesame seeds and 1 tbsp. sesame oil. Coat a baking sheet with cooking spray and spread tofu in single layer. Bake at 350 until golden- about 30 mins.

Mix remaining sesame oil, dijon mustard, rice wine vinegar, and mirin in a bowl. Toss salad ingredients and coat with dressing. Toss baked tofu with salad when cooled. Salad may be served immediately or stored in refrigerator for up to 2 days. Makes about 10 servings.
